With the beginning of Spring this week, the Classic Wedge Salad has made its debut at Beans in the Belfry as a new fresh menu item.

This truly American dish was popular in the 1920s per period cookbooks and culinary references in the New York Times.  It made a come-back in the 1950s and just recently resurfaced on trendy menus. 

At Beans, we top a quarter wedge of crunchy Iceberg lettuce with bacon, chopped tomatoes, red onion and a generous portion of crumbled  blue cheese, add homemade blue cheese dressing and a balsamic glaze, for a light meal or a starter before a Panini or Chili dinner.  Or pair it with a cup of hearty soup and house croutons for a light but satisfying lunch.
